Greek Style Purslane Pesto

Purslane pesto 1Considered by most gardeners to be a weed, purslane is now being cultivated and is available at some of our Indiana farmers' markets. You might even find some in your CSA boxes in the next few weeks. I've never tasted purslane before so I bought a few bunches from Balanced Harvest Farm and thought I would experiment with it. 

Once I sampled the succulent, lemony leaves, I knew a pesto was in my future. I did some research and found that purslane is very popular in Greece where it is used in a number of dishes. The pesto I created is full of Greek flavors and chunky feta.

I'm using it to dress pasta, spread on warm pita bread, and as a sandwich spread. Once you taste it, I think you'll have even more uses for it. And, I'm freezing some for a winter treat.
