Hot and Sour Duck Soup from Goose the Market
Why did Bon Appetite name Indianapolis' Goose the Market one of the ten best sandwich shops in America? One bite of the shop's Batali sandwich (my husband's favorite on the menu) and you'll know why.
It's a shame the reviewer wasn't researching the 10 best soups in the country. It would be a safe bet that any number of Chef Chris Ely's soups would have easily been given national acclaim as well.
Chris recently sent me his recipe for Hot and Sour Duck Soup. You'll find it in the Winter Recipes section of this site. Can't find time to make soup this week? Fortunately, Chris will have this soup, made with Gunthorp Farm's Indiana duck, on his menu all next week in honor of Indiana Local Food Soup Swap 2009.
