Grilled Steak with Pickled Green Garlic
On my recent trip to Seattle, my friends and I had dinner at the famed Palace Kitchen where I had the Grilled Flat Iron Steak with Pickled Green Garlic. The steak was fabulous (so tender and grilled perfectly) but the pickled green garlic was just a bit too bitter for my tastes. And it just seemed like the dish was missing something. Like maybe a sauce to finish it.
The next morning, I told my husband about the dish. His inner "former chef" kicked into high gear and he went out that evening to our garden to gather up some green garlic to try his hand at improving the pickled garlic and creating a sauce for the dish.
When I got home, he made me a homecoming dinner using his new recipe. With all due respect to the immensely talented chef Tom Douglas, my husband's take on the steak
and green garlic was the better of the two meals.
My husband's secrets? First he added brown sugar and cloves to the pickling liquid and then he used the strained liquid to marinate the steak and make a glaze for it. WOW!! Try this one at home.
