Slow Cooked Tomato Sauce
Just a few more weeks and tomato season will be over. So while these red beauties are still in our gardens and markets, it's time to make a few batches of sauce. My recipe for slow cooked tomato sauce is a 3-4 hour labor of love and worth every minute of it. The tomatoes simmer away on the stove top with an herb bouquet
of fresh thyme and oregano until they are soft. Then the tomatoes and juice are run through a food mill to remove the peels and seeds. Another 2 hours or so of simmering in a deep skillet reduces the sauce to a thick consistency. This sauce is great for pastas, lasagnas, chili, and can be used as a base for other sauces and soups.
