Quick Cooked Tomato Sauce
Cherry and grape tomatoes will be abundant in markets for a few more weeks. Besides being ideal for snacking and salads, they make a delicious warm tomato sauce that can be on your table in about 20 minutes.
To make the sauce, cut the tomatoes in half, add them to a bit of warm olive oil and cook until they are heated through and beginning to soften. Remove from the heat, toss in some finely shredded basil and salt and pepper to taste. This quick sauce is great on all pastas and makes a delicious hot salsa for grilled chicken.
