Local Folks Foods' Simply Fresh Summer Tomato Sauce

Img_0477_4 Steve Spencer of Homestead Growers has a passion for growing and making great tasting, healthy food. And his Simply Fresh Summer Tomato Sauce reflects this commitment. Perfectly seasoned and packed full of fresh, locally grown tomatoes, mushrooms, onions, bell peppers, and carrots, it is a must have go-to ingredient for the busy mid-week home cook who doesn't have the six hours that Steve spends simmering this delicious sauce.

Although it takes pasta from good to great in a heartbeat, don't just stop there. Try making an Italian Chicken Stew with it. Just saute two pounds of boneless chicken thighs cut into one inch chunks in a bit of olive oil or butter over medium high heat until they are browned on all sides. Add to the pan one pound of white button mushrooms cut into quarters and saute until they are browned on all sides. You could also add some sweet onion slices and brown them along with the mushrooms if you like. Pour one quart of Simply Fresh Summer Tomato Sauce over the chicken/mushrooms and bring to a gentle simmer. Continue to simmer for 10 minutes or until the chicken is cooked through. Serve the stew over your favorite pasta or (my favorite) a pile of steaming hot soft polenta. Add a few shavings of the Swiss Connection's Pazia Parmesan cheese and in no time dinner is served!

And just when you think it can't get any better than this, Steve is also working on two other sauces, Italian Delight (a hearty, thick sauce for pasta, pizzas, and strombolis) and Mushroom and Garden Vegetable, both of which will be in production and available within a few weeks.
