Indiana Style Barbecue Sauce
In 2004, Chef Tad Delay, co/owner of The Limestone Grille in Bloomington, Indiana began developing BBQ sauces, dry rubs and hot sauces. Three years later, his Mt. Pilot products include five BBQ sauces, two hot sauces, and an all natural dry rub.
I met Chef Tad at the Bloomington Farmers Market and sampled his product line. The star of the show? The Indiana Style Sauce which is made from locally-grown tomatoes and onions and gets its sweet and smoky flavors from Indiana Shagbark Hickory syrup and a pinch or two of Mt. Pilot's All-Natural BBQ Rub. At 37 calories per tablespoon, it’s a low calorie condiment packed to the brim with BIG flavors. Chef Tad suggests serving his Indiana style sauce over chicken, ribs, or pork shoulder. I made a batch of sweet potato fries this weekend and used the Indiana Style sauce in place of ketchup.
